No Bake, Peanut Butter Cookie Dough Bites

These are easy to make, something fun to do with the kids too. Refined sugar free, dairy free, gluten free. A great little treat or pick me up with a cup of tea.

Be warned they are highly Moreish!

SERVES:
10-12 bites

Ingredients

  • 200g nut butter, I prefer peanut in this
  • 100g ground almonds
  • 40g oat flour, or rolled oats that you have whizzed into a flour
  • 20g rolled oats
  • 100g vegan dark choc chips or a bar chopped
  • ¼ cup maple syrup
  • 40g coconut oil
  • 1tsp vanilla
  • ¼ tsp salt
  • Large pinch of cinnamon

Instructions

  1. In a small sauce pan combine the coconut oil, nut butter, maple, vanilla and salt. On a low heat stir until runny and combined.
  2. In a large bowl combine the rolled oats, oat flour, almond flour, cinnamon and half the chocolate chips.
  3. Once the wet ingredients have combined add to the dry and stir to combine.
  4. Roll into walnut sized balls, place on a lined baking tray and place in freezer to firm up.
  5. Whilst the bites are cooling, melt the remainder of the chocolate chips in a small bowl, by Placing it on top of a small pan of gently simmering water until melted. Don't let the bowl touch the water or the water boil. Or melt in a microwave.
  6. When the bites have chilled remove from the freezer and drizzle with the melted chocolate.
  7. Place back in the freezer to set for 20-30 minutes, remove and store in an airtight container in the fridge or cool place.
  8. Try not to eat them all at once!
