Nutty cacao energy balls

Energy balls, bliss balls, protein balls, raw-this and raw-that balls... I couldn't decide what to call mine, so I went for Nutty Cacao Energy Balls, because... well, that's what they are!

These are the perfect texture: soft but not too soft, with a little bite and some crunch from the cacao nibs. I challenge you to stop at just one! Any leftovers can be kept in an airtight container in the fridge for 5 to 7 days.

SERVES:
15-20 balls

Ingredients

For the energy balls

½ cup pecan nuts

½ cup almonds

¼ cup raw cacao powder

6 large soft pitted dates

2 heaped tbsp cacao nibs

1 tbsp almond butter

1 tsp vanilla bean paste

Good pinch of sea salt

For the dusting (choose one)

1 tbsp matcha power

1 tbsp turmeric

1 tbsp beetroot powder

1 tbsp raw cacao powder

Instructions

  1. Add all the ingredients for the energy balls to a food processor, and blend until a large ball has formed. When you pinch the mixture together, it should hold its shape.
  2. Roll the mixture into walnut-sized balls – you should be able to make around 15-20. Arrange the balls on a baking sheet, and refrigerate for about 1 hour, until firm (if you can wait that long).
  3. Roll the balls in your chosen dusting, then tuck in!
