Spring Freekeh Salad with Tahini Yogurt Dressing

This is such a light and simple salad and you can use whatever salad vegetables you have to hand, radishes are a lovely addition and I always find a little citrus in salads works well.

Freekeh is created from young green grains of wheat, they have been harvested at their nutritional peak and then dried and lightly toasted. They have a delicate Smokey flavour and pack a big nutritional punch. You could replace them with lentils or other grains of choice.

Ingredients

1 250g bag ready cooked freekeh

Tahini Yogurt Dressing

¼ cup tahini

½ cup coconut or other plant yogurt

1 garlic clove

Juice ½ lemon

1 tbsp. olive oil

Salt and pepper

Salad

2-3 peeled and sliced oranges

2 avocados sliced

2 cups of Salad leaves romaine is nice

2 celery sticks thinly sliced plus a few leaves

1 small red onion thinly sliced

Small bunch mint leaves

2 tbsp. Black or white sesame seeds

Any additional vegetables you fancy

Instructions

  1. In a small bowl combine all the Tahini yogurt dressing ingredients, add water until you have the desired consistency. About 2-3 tbsp. usually does it.
  2. Cook the bag of Freekeh per instructions, usually 2 minutes in a microwave.
  3. I like to add a big dollop of dressing to the plates and spread it out thinly, add ¼ bag of freekeh to it and then dress with all my lovely salad toppings. Finish with herbs and seeds.
  4. Alternatively you can combine the freekeh and salad ingredients in a bowl before you plate up, and drizzle with dressing, herbs and seeds.
