I pack of ready rolled puff pastry I use Jus Rol.
1 400g jar of mincemeat
½ cup icing sugar
Juice from 1 clementine
½ cup toasted almond flakes
Extra icing sugar or edible glitter to give a final dusting. I used Waitrose bitter orange sparkly snow.


Pre heat the oven to 180°C.

Unroll the pastry and spread evenly with the mincemeat.

Roll up from the long side into a log.

Cut into even slices, I do this by first cutting in half, then quarters, then eights and finally sixteenths.

Place on a baking tray in a circle leaving a gap of about 1 cm between each piece, lay 11 in a circle round the edge and 5 in the middle.

Place in the oven for about 30 minutes until nicely puffed up and golden.

Remove from the oven and set aside.

Mix the icing sugar with the clementine half the juice at a time until you get the desired consistency.

Drizzle with the icing and sprinkle with almond flakes and a little dusting of icing sugar.
