Baked Cardamom Mango with Lime Yogurt

This couldn‘t be easier to make, at it makes a nice change to cold mango. I also love cardamom, so its another excuse to use it.

Ingredients

  • 2 mangos halved, scored and pushed up.
  • 8 cardamom pods bashed to release
  • 1 tbs maple
  • 3 tbs
  • Water
  • 200g Coconut yogurt
  • 2 limes

Instructions

  1. Preheat to the oven to 200°C.
  2. Place the mango cheeks in an oven proof dish, sprinkle the cardamom pods and any released seeds over the mango. Drizzle with the maple and add the water to the base of the dish.
  3. Place in the preheated oven for approx. 10-15 minutes until starting to char on the edges. If the pan is drying or burning add a little water.
  4. Meanwhile add the zest of 1 lime and the juice of half to the yogurt and stir to combine. Cut the remaining lime into wedges.
  5. Take the cooked mango out the oven and serve in bowls, with dollops of limey yogurt, any pan juices drizzled over and lime wedges.
