Bircher Muesli

I pretty much always use the same recipe for my overnight oats, with a few swap ins depending on my mood and the season. At Christmas I might spice it up, or in summer just keep it simple with vanilla and maybe some fresh raspberries and pistachio, you can even add cacao powder and make it chocolatey. The best thing about Bircher is that you can top it with almost anything you fancy, any fruits or nuts you happen to have. Just plain old banana with a drizzle of maple/honey/agave is delicious. You can even add nut butters, jam, poached or baked fruits. It can be whipped up in no time on a Sunday night and that's your breakfast sorted for the week.

Ingredients

400g rolled jumbo oats

80g pumpkin seed

80g sunflower seed

1tsp cinnamon

1tbs chia seed

1tbs maple syrup/honey/agave or omit

1tsp vanilla extract

1 large granny smith apple, any apple will work though. Coarsely grated.

¼ cup sultanas (optional)

1.3ltrs oat/almond/soy milk or whatever you fancy

Instructions

  1. Combine all the ingredients in a large container with a lid or bowl that can be covered.
  2. Refrigerate overnight.
  3. In the morning give it a good stir, you can add more milk if you feel it needs it or like it a little looser.
  4. Top with nuts, fruits, or just eat it as it comes.
