New York Deli Toastie

This is the ultimate vegan toasted sandwich and I defy anyone not to love this combination.

SERVES:
2

Ingredients

  • 4 large slices of sourdough
  • 4 slices of vegan cheese (I like @followyourheart smoked gouda)
  • 4 sweet and sour pickles sliced
  • 2 tsp hot English mustard
  • 2 tsp vegan mayo
  • 1 large carrot
  • 1 medium raw beetroot
  • Chunk of celeriac similar size to your beetroot
  • 1tbs neutral oil

Instructions

  1. Heat up your sandwich toaster or a large frying pan. I have only ever used my sandwich toaster, but I am sure you could use a frying pan.
  2. Grate the veg into a bowl and mix.
  3. Spread each slice of bread first with the mustard flowered by the mayo.
  4. Lay 1 slice of cheese on each side of the bread, tearing it in half if needs be.
  5. Lay the sliced pickles on one side, and top with the mix grated veg.
  6. Place the other side on top and squish.
  7. Oil your toaster or frying pan and place the sandwich in oil the top side before closing the lid or flipping, if using a frying pan.
