Spelt Waffles with Yogurt and Blood Orange

This is basically my Vegan Pancake recipe, with a little tweak. Pancakes are happy food and I associate them with weekends, probably because that's when I am afforded the time to make them and sit down and enjoy them, weekday breakfasts are a little rushed. This is my Spelt flour version, spelt flour has a natural nutty sweet taste.

Ingredients

Dry

1 cup spelt flour

1 tbsp. baking powder

2 tbsp. caster sugar/coconut sugar (optional)

Good pinch of cinnamon

Wet

1 cup almond milk

1 tbsp. apple cider vinegar

1 tsp light oil I used ground nut

Extra oil for greasing the waffle iron.

To serve

Coconut yogurt

Orange slices

Ground cinnamon

Pumpkin seeds

Instructions

  1. Place the wet ingredients in a bowl and set aside, allow this to curdle for a minute or two.
  2. Combine the dry ingredients in another bowl.
  3. Gradually add the wet to dry, whisking to combine. Do not over whisk or over work the batter. Allow to rest while you prepare your toppings.
  4. When you're ready to serve, get the waffle iron heated up to max, if it has a dial. You may know your iron and there will know what temperature and how long they will take to cook. Mine is on high and takes about 5-6 minutes.
  5. I find the secret to easy waffle removal is a well-oiled iron, almost too well oiled.
  6. When you're ready to cook add a ladle of batter allowing space for expansion.
  7. Top your cooked waffles with yogurt, orange slices a drizzle of maple syrup
